Ingredients
  

  • 1 ½ cups Ditalini pasta Small tube-like pasta
  • 4 cups Chicken or vegetable broth Adds rich flavor
  • 2 tbsp Olive oil or butter Enhances texture
  • 1 medium Onion diced For a flavorful base
  • 2 cloves Garlic minced Adds depth
  • 1 large Carrot diced Sweetness and color
  • 1 stalk Celery diced Crunch and freshness
  • 1 14 oz can Diced tomatoes Creates a light sauce
  • ½ tsp Dried basil Classic Italian herb
  • ½ tsp Dried oregano Enhances flavor
  • ½ tsp Black pepper & salt To taste
  • ½ cup Parmesan cheese grated Nutty and creamy finish
  • Fresh parsley chopped For garnish

Instructions
 

1️⃣ Boil the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add 1 ½ cups of ditalini pasta and cook for 8-10 minutes until al dente.
  • Drain and reserve ½ cup of pasta water for later.

2️⃣ Sauté the Vegetables:

  • Heat 2 tbsp olive oil or butter in a large pot over medium heat.
  • Add onion, carrot, and celery, and sauté for 3-4 minutes until softened.
  • Stir in minced garlic and cook for another 30 seconds.

3️⃣ Make the Sauce or Broth:

  • Pour in 1 (14 oz) can diced tomatoes and 4 cups of broth.
  • Add dried basil, oregano, salt, and black pepper to taste.
  • Let simmer for 10 minutes to blend flavors.

4️⃣ Combine & Serve:

  • Stir in the cooked ditalini pasta and mix well.
  • If needed, add reserved pasta water to adjust consistency.
  • Sprinkle ½ cup grated Parmesan cheese and stir.
  • Garnish with fresh parsley and serve warm.

💡 For Extra Creaminess: Add ½ cup heavy cream before serving.
