Ingredients
  

  • 2 cups cooked basmati rice day-old preferred
  • 3 large eggs beaten
  • 1 small onion finely chopped
  • ½ cup mixed vegetables carrots, bell peppers
  • 1 tbsp ginger-garlic paste
  • 2 tbsp sesame or sunflower oil
  • ½ tsp black pepper powder
  • ½ tsp garam masala
  • Pinch fennel seeds
  • Salt to taste
  • 1-2 tbsp soy sauce optional, for flavor
  • 1 tsp sesame oil for aroma

Instructions
 

Step 1: Prepare the Ingredients

  • 1️⃣ Chop the onions, vegetables, and prepare the ginger-garlic paste.
  • 2️⃣ Beat the eggs in a bowl with a pinch of salt.

Step 2: Cook the Eggs

  • 3️⃣ Heat 1 tbsp oil in a large wok over medium-high heat.
  • 4️⃣ Add the beaten eggs and scramble them until fully cooked. Remove and set aside.

Step 3: Sauté the Aromatics

  • 5️⃣ In the same wok, add 1 tbsp oil, then stir-fry the onions, fennel seeds, and ginger-garlic paste for 1-2 minutes until fragrant.
  • 6️⃣ Toss in the mixed vegetables and cook for another 2 minutes.

Step 4: Add the Rice & Seasonings

  • 7️⃣ Increase the heat to high and add the cooked basmati rice. Stir-fry for 2-3 minutes to get crispy edges.
  • 8️⃣ Add the black pepper, garam masala, soy sauce (if using), and salt. Stir well.

Step 5: Combine Everything

  • 9️⃣ Return the scrambled eggs to the wok and mix thoroughly with the rice.
  • 🔟 Drizzle with sesame oil, stir once more, and remove from heat.

Step 6: Serve & Enjoy

  • 1️⃣1️⃣ Garnish with spring onions and serve hot with your favorite side dish!

Notes
